This has been a family favourite for as long as I can remember, we don't make it too often as it is so indulgent but it is a marvellous treat. Normally you just top it off with milk or plain chocolate but I went to town a bit and put milk, dark and white chocolate on top as a birthday treat for my big brother.


Ingredients
For the shortbread:
- 250g plain flour
- 75g caster sugar
- 175g butter, softened
For the caramel:
- 115g butter
- 1 tin condensed milk
- 2 Tbs Golden Syrup
For the topping:
- 220g plain or milk chocolate
Method- Pre-heat the oven to 180'C
- To make the shortbread, mix the flour and caster sugar in a bowl. Rub in the butter until the mixture resembles fine breadcrumbs. Knead the mixture together until it forms a dough, then press into the base of the prepared tin. Prick the shortbread lightly with a fork and bake in the pre-heated oven for about 20 minutes or until firm to the touch and very lightly browned. Cool in the tin.
- To make the filling, melt the butter, syrup and condensed milk in a saucepan stirring all the time. Bring to the boil and boil for 7 minutes. Pour over shortbread. Melt chocolate over a low heat and pour over the top. Mark into squares when half set.
