Courgette and oatmeal biscuits

Yep, you heard right. We came across this sugar free recipe for courgette biscuits, and I wanted to try it out.
The children were more sceptical, and couldn't get their head around vegetable biscuits. I tried to explain that it would be kind of like carrot cake. But after they tried them they all loved them. They are a kind of a cake biscuit, a soft cake texture, but in a biscuit shape. The children were coming back for seconds and thirds.

1/2 cup butter or coconut oil
3/4 cup honey
1 egg
1 cup whole wheat flour*
1 cup spelt
1 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/4 tsp. salt
1 cup grated zucchini
1 cup oatmeal
1 cup raisins

Instructions: Preheat the oven to 180deg. Cream together the butter and honey. Then add the egg and beat well. Stir together baking soda, cinnamon, nutmeg, and salt. Add this mixture alternately with the zucchini to the egg mixture. Stir in the oatmeal and raisins. Drop by teaspoons onto greased cookie sheets. Bake for 10 to 12 minutes.
