Diet challenge

Our whole family diet challenge this week has been to add more superfoods to our diet. The superfoods are the foods with the highest nutrient density. The top 30 are:

1. Collard, mustard, & turnip greens 1000

3. Watercress 1000
4. Bok choy 824

6. Brussels sprouts 672
7. Swiss chard 670

I have tried to add many to each day, and once you have them in the house, it's amazing how easy it is to add them to dinners(or get inspired by).
Wild salmon stir fry, lots of vegetables in this.
My all time favourite soup which has no less than 8 vegetables in, not counting the onions and garlic. I will post this recipe as soon as I have some more time to.
